Key Duties
As a Section Head Chef – Arabic Lebanese Bread, you will oversee the bread-making section and ensure high-quality production. Responsibilities include:
- 
Leading the daily preparation, baking, and presentation of traditional Lebanese breads such as pita, saj, markouk, kaak, and manakish dough.
 - 
Managing dough mixing, fermentation, shaping, and baking processes to maintain product authenticity.
 - 
Supervising bakery staff, assigning tasks, and providing training on bread-making techniques.
 - 
Ensuring food safety, hygiene, and HACCP compliance at all times.
 - 
Monitoring ingredient usage, portion control, and minimizing waste.
 - 
Collaborating with procurement to source fresh, high-quality raw materials.
 - 
Planning production schedules based on orders and forecasted demand.
 - 
Maintaining baking equipment and reporting performance updates to the Executive Chef/Head of Bakery.
 
Requirements
The ideal candidate will bring:
- 
At least 5 years of proven experience in Arabic/Lebanese bread-making.
 - 
Strong hands-on expertise in preparing authentic breads (pita, saj, markouk, manakish, etc.).
 - 
Previous leadership or supervisory experience in a bakery or kitchen.
 - 
Knowledge of food safety, hygiene, and HACCP standards.
 - 
Strong communication, organizational, and team management skills.
 - 
Ability to manage high-volume production in a fast-paced environment.
 - 
Passion for Lebanese culinary heritage and a willingness to innovate.
 
Preferred Skills:
- 
Experience with artisan and commercial-scale bread production.
 - 
Familiarity with modern bakery equipment.
 - 
Creativity in recipe development.
 - 
Bilingual ability in Arabic and English.
