Job Purpose
We are seeking an experienced Head Baker to lead our bread and sweets section. This role requires mastery of Arabic bread-making techniques, team leadership, and a strong focus on food safety, hygiene, and production efficiency. The ideal candidate will oversee daily operations, ensure product quality, and help innovate new bakery items while maintaining traditional standards.
Key Duties
- 
Oversee daily production of Arabic breads and sweets, ensuring quality, taste, and presentation.
 - 
Manage dough preparation, fermentation, shaping, and baking using authentic techniques.
 - 
Supervise, train, and mentor bakery staff assigned to the bread section.
 - 
Ensure compliance with Sharjah Municipality regulations and HACCP standards.
 - 
Monitor ingredient stock levels and coordinate with storekeeping for timely replenishment.
 - 
Maintain schedules to fulfill retail, wholesale, and catering orders on time.
 - 
Implement cost controls by managing waste, portion sizes, and production efficiency.
 - 
Inspect, maintain, and ensure cleanliness of bakery equipment and ovens.
 - 
Collaborate with management on new product development and seasonal variations.
 
Requirements
- 
Proven experience as a Baker specializing in Arabic breads and sweets.
 - 
At least 5 years of bakery experience, including 2+ years in a supervisory or head baker role.
 - 
Strong expertise in dough fermentation, shaping, and baking processes.
 - 
Knowledge of UAE food safety and hygiene regulations.
 - 
Leadership and team management skills with the ability to train and motivate staff.
 - 
Flexibility to work early mornings, weekends, and festive seasons.
 - 
Strong organizational and time management skills.
 - 
Communication skills in English (Arabic is a plus).
